I feel so excited about this cake, I love pretty much most things American, especially there cookies and cakes. This cake is inspired by an Old Fashioned American recipe, Its such a classic with a lovely texture for sculpting and carving 3D cakes from.
It will always be one of my favourites. The measurements are in cups which can be easy found in your local supermarket (and always useful to have around!)
1 cup Butter
2 cups Caster sugar
1 tsp vanilla extract
2 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 cups buttermilk
Grease and line cake tins. Preheat oven to 160oc.
Cream butter, sugar, vanilla and eggs. Sift flour with baking soda, baking powder and salt. Gradually add flour mixture to the creamed mixture along with the buttermilk until combined and a smooth mixture. tip into your prepared baking tins and cook until golden brown and the cake springs back.
Let the cake cool completely before carving and decorating.
